I think this recipe is perfect as is, but don't be afraid to customize it depending on your preferences.

For instance, if you want to make vegan pancakes then you easily can with a few simple swaps. All you have to do is substitute the dairy milk for non dairy milk - I prefer unsweetened almond milk, oat milk, or coconut milk - and swap the melted butter for vegan butter.

As for the flour, I use regular all-purpose flour, but you can easily use whole wheat flour or even oat flour instead. It'll change the flavor a little bit, but these pancakes without eggs will be just as delicious.
